Filipino Chicken Asado, also known as Asadong Manok, comes from the province of Pampanga, which is Northwest of Manila in the Philippines. However, Chicken Asado was actually influenced by the Chinese. With the Chinese version, the meat is marinated in soy sauce, brown sugar and spices such as five-spice. With the Filipino version, the meat is marinated in soy sauce, lemon juice, onions, and garlic.

 

 

This Filipino chicken asado is so easy to prepare, so easy to cook, and super delicious. The prep takes about 15 minutes and once you get everything going, you can just leave it on simmer and leave it alone. By the end of cooking, the marinade has thickened and the potatoes are soft. Not to mention, the chicken thighs are super tender and falls apart.

Now, I’m not going to lie. When I first started looking at Filipino Chicken Asado recipes, I thought it would turn out like chicken adobo, minus the tomato sauce. However, the tomato sauce gives it a whole new taste. It’s tangy, it’s savory. It’s so, so, so, delicious. Especially when you pour everything over rice, mix it all up, and have a spoonful of everything. Just thinking about that first bite is already getting me drooling.

Tips On Cooking Filipino Chicken Asado

 

For this recipe, I use chicken thighs in this recipe, but you can also use chicken breast if you prefer.

 

Marinate the chicken for 30 minutes. I don’t recommend anything longer than 2 hours since the lemon juice will eventually break down the protein fibers.

 

 

Chicken Adobo – This is another great chicken recipe. One of my favorites to cook and so full of flavor. It is absolutely perfect with steamed rice.

 

Garlic Fried Rice – If you’re a big fan of garlic, this dish is for you. It’s literally just rice and garlic fried up together in perfect unison.

 

Beef Mechado – This is another one of my favorites. A hearty stew that’s perfect for cold nights. Also great with steamed rice.

Ingredients

  • 1 1/2 lbs Chicken Thigh
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1/3 cup Tamari
  • 1/4 cup Lemon Juice
  • 1/3 cup Onions Thinly Sliced
  • 1 tbsp Garlic
  • 3 tbsp Avocado Oil
  • 1 cup Tomato Sauce
  • 1 cup Water
  • 3 leaves Bay Leaves
  • 2 medium Potatoes Chopped

Instructions

  • Trim any fat off the chicken thighs.
  • Sprinkle both sides of the chicken thighs with salt and pepper. Move into a wide mouthed bowl.
  • Add soy sauce, lemon juice, onions, and garlic.
    Give it a good mix. Set aside and marinate for at least 30 minutes.
  • Add oil into a warm pan.
  • Once the oil is hot, add chicken. Cook for 2 - 3 minutes per side.
    Remove from heat once both sides are cooked and set aside.
  • In a deep pan, add oil.
    While you're waiting for the oil to warm up, strain the onions and garlic from the marinade with a slotted spoon. Be sure not to waste any marinade.
  • Saute the onions and garlic for 1 - 2 minutes.
  • Add chicken, marinade, tomato sauce, water, and mix well.
  • Add bay leaf, potato, mix well, and cover.
  • Simmer on low until potatoes are soft and chicken is tender.
  • Serve hot with rice and enjoy.
