Egg bhurji or anda bhurji is a popular street food found in India. It’s also a very popular breakfast option. It’s made with very simple ingredients and can be easily made. This breakfast is packed with tons of flavor. It’ll definitely jump-start your day.


Known as anda bhurji in India, where anda means egg and bhurji means a mishmash of two or more ingredients. This recipe is popular because it’s quick to make and high in protein. If you’re like me, and can have breakfast any time of the day, then you’ll love this.



Scrambled eggs are great, but I feel that egg bhurji puts a unique twist on this classic dish. Spices such as garam masala, red chili powder, are thrown in. Onions and tomatoes are also added to make a great rounded breakfast.


My favorite part of having egg bhurji is that it can be eaten with pav. You can take a piece of pav and stuff it with the bhurji. If you do that, then it’s like you’re eating a delicious scrambled egg sandwich!

  • 4 medium Eggs
  • 2 tbsp Onions Chopped
  • 2 tbsp Tomatoes Chopped
  • 1/2 tsp Garam Masala
  • 1/2 tsp Turmeric
  • 1 tbsp Coriander
  • 1/2 tsp Salt
  • 1/4 tsp Red Chili Powder
  • Thai Chili* Optional


  • Chop up onions and tomatoes. Set aside.
  • Crack eggs into a bowl. Whisk it well.
  • Add in garam masala, turmeric, red chili powder, salt, and Thai chilies if using.
    Whisk again and set aside.
  • Add butter to a warm pan.
  • Saute onions for 2 - 3 minutes.
  • Add tomatoes. Saute for 2 - 3 minutes.
  • Add eggs. Let it set for a few minutes.
  • Once it starts to set, start stirring and scrambling the eggs.
  • Add in coriander. Mix well.
  • Remove from heat once the eggs are cooked the way you like them.
