Super Cheesy Mac and Cheese!

Have you ever wanted that cheesy mac and cheese, but don’t want to go to a restaurant to get it? Or are you tired of that boxed mac and cheese where the macaroni is just dry in a few minutes? Well buckle down cause I got a good one for you!


Every single time I would make it, my husband would ALWAYS complain that it isn’t cheesy enough. He would always remind me about how the restaurant mac and cheese is always so cheesy. After many trials and errors, I was finally able to make him happy.



So let’s talk about it a little bit. I made this cheesy mac and cheese dish as part of my 4th of July series. I thought it would be perfect for non-meat eaters. Don’t get me wrong, I’m not saying that this is only for 4th of July. This is great for ANY time: 4th of July, meatless Monday, any time you’re feeling sad, you name it!



For this cheesy mac and cheese recipe, I’ll just be using the good old, reliable elbow macaroni. For the cheese, I’ll be using 3 different kinds of cheese. Do not buy the pre-shredded cheeses! I know it will be a pain to grate everything, but the end result will be well worth it!



I’m going to keep this mac and cheese simple and not mix in any toppings such as bacon. However, when you make this yourself, feel free to mix in any toppings that you want!

Tips For Cooking


I would definitely undercook the macaroni. Since this recipe calls for it to also be put into the oven, it will continue to cook there. No one wants to eat mushy cheesy mac and cheese! I know I wouldn’t want to!


If you don’t like any of the cheeses I am using, feel free to substitute them with your favorites! This is YOUR cheesy mac and cheese! However, I think I picked some great cheeses! :P


Shred your cheeses! I know it will be a pain, but shred them! I was cursing the entire time I was doing it. It’s a pain and I was scared of grating parts of my hand off, but shred your cheese to make this cheesy mac and cheese!

  • 1 lb Elbow Macaroni $0.20
  • 1/2 cup Unsalted Butter $0.04
  • 1/2 cup All-Purpose Flour $0.06
  • 3 cup Whole Milk $0.01
  • 1 cup Half and Half $0.01
  • 2 cup White Cheddar Shredded $0.01
  • 2 cup Gruyere Shredded $0.01
  • 2 cup Monterey Jack Shredded $0.06
  • 2 tsp Salt $0.25
  • 1/4 tsp Smoked Paprika $0.20
  • 1 cup Panko $0.10
  • 1/2 cup Parmesan Shredded $1.25
  • Pepper to taste


  • Bring a pot of water to a boil and add macaroni in.
    Keep an eye on the time and remove it a minute or so before it is cooked. Drain and keep aside in a large bowl.
  • While the macaroni is cooking, grate your cheeses. Mix them together in a big bowl.
  • Once you have your cheese grated, melt butter in a large saucepan.
  • Slowly add the all-purpose flour in while whisking.
  • After about 1 minute, slowly pour the milk in. Continue to whisk. Keep whisking until smooth and slightly thickened.
  • Shut off the heat and slowly add 3 cups of cheese mixture. Make sure to whisk until the cheese has melted and is completely smooth.
  • In the large bowl with the cooked macaroni, slowly pour the cheese sauce over it. Mix well to ensure all macaroni pieces are coated in cheesy goodness.
  • Grab your baking dish grease it up before pouring half of the macaroni mixture into it.
    Layer 1 1/2 cup cheese mixture on top.
  • Add the other half of the macaroni mixture.
    Add remaining 1 1/2 cheese mixture on top.
  • In a small bowl, mix panko breadcrumbs, parmesan cheese, and paprika.
    Sprinkle this mixture evenly on top.
  • Bake at 350 degrees Fahrenheit for 25 minutes.
    Set oven to broil for the last 5 minutes of cooking.
