Bhindi stir fry is a great Vegetarian dish if you need to break away from the regular. It uses bhindi, also known as okra, and a bunch of spices. Then you cook the okra over low heat until it’s nice and soft.



This bhindi stir fry is super simple and easy to cook. Once all the spices are added and the okra has been mixed well, you don’t need to pay too much attention to it. While cooking, you just check up on it, stir, and add more water if needed. I was able to do a few other things in the kitchen while this cooked.



Bhindi stir fry has a lot of benefits as well. For example, okra is low on calories and high in fiber. It also has a good amount of potassium, vitamins B and C, and also calcium.


Just a warning, that if you’ve never cooked or worked with okra before, it does get slimy. Okra releases some slime, but don’t worry, we are able to digest it! However, once you get over that, this bhindi stir fry may become your favorite!

Tips On Cooking Bhindi Stir Fry


Rinse your bhindi. More importantly, after you rinse them, lay them out to dry before cutting. You can either let them air dry or you can wipe them down with a paper towel. Just make sure they are dry.


You may need to add more water as you cook the bhindi stir fry. I start off with 1 cup in the beginning. By the end of cooking, I added a total of 1 1/2 cups of water to 2 cups of water.

  • 1/2 lb Bhindi (Okra)
  • 1/2 tsp Asafoetida (Hing)
  • 1 tsp Cumin Seeds
  • 3/4 tsp Ginger
  • 3/4 tsp Garlic
  • 1 tsp Turmeric
  • 1 tsp Coriander Powder
  • 1 tsp Salt
  • 1/2 tsp Red Chili Powder
  • 1/2 tsp Garam Masala
  • 1/2 tsp Amchur Powder
  • Water as needed


  • Add oil into hot pan.
  • Add ginger, garlic, and cumin seeds into the pan and saute.
  • Add bhindi into the pan. Mix well. Saute for 3-4 minutes.
  • Add in hing, turmeric, coriander, salt, red chili powder, and garam masala. Mix well.
  • Add in 1 cup of water. Mix well.
  • Add in amchur powder. Mix well.
  • Cook on low heat until bhindi becomes soft.
    Keep an eye out as you may need to continue adding water while cooking.
  • Serve hot with roti.
