Hearty Beef Mechado

Beef Mechado is a Filipino beef stew that is simmered in a tomato base along with potatoes, peas, and carrots. This is a great hearty stew that is great to eat any time – whether it’s winter or summer. Personally, I can eat this any time of the year and be completely happy eating it over a bowl of hot rice.

 

 

Do not be afraid of the cooking time! I’ll be honest, this recipe does take a while to cook but I PROMISE you that the wait is well worth it! The beef will melt in your mouth and the potatoes are so soft! Yuuuummmm! Just thinking about it is making my mouth water!

Ingredients

  • 1 tbsp Garlic
  • 1/3 cup Onion
  • 1 lb Beef Chuck
  • 8 oz Tomato Sauce
  • 3 tbsp Avocado Oil
  • 2 medium Potato
  • 1/4 cup Tamari
  • 1/2 tsp Pepper
  • 2 leave Bay Leaf
  • 1/2 cup Frozen Peas and Carrots
  • 1 cup Water
  • Salt to taste

Instructions

  • In a deep pot, heat oil.
  • Once oil is hot, add in garlic and onion and sauté.
  • Add beef into the pot and sauté until beef is light brown.
  • Add tomato sauce and water to the pot, bring to a simmer and cook until beef is tender.
    During this step, it can take anywhere from 60 - 120 minutes! Please be patient and keep checking on your beef!
  • Add soy sauce, ground black pepper, bay leaf, and salt and continue to simmer.
  • Add potatoes, peas, carrots, and hot dog and continue to simmer until potatoes are soft.
    During this step, if needed add 1/2 cup of water.
  • Serve piping hot and over rice.
